Low Carb Hot and Sour Prawn Soup

This soup can be served in bowls or on plates on top of a bed of boiled rice.

For ingredients, you shall prepare for 750ml chicken stock, 3 stick lemon grass (cut into 5mm slices), 3 kaffir lime leaves, 12 raw medium sized prawn (shelled but not deheaded), 150g mushrooms (halved),
5 fresh small whole green chilies, 25g coriander leaves and stalks (sliced), 3 tablespoons of lime juice, 1 tbsp of fish sauce.
For the making of the soup, you shall boil stock in a pan. When the soup boiling, add lemon grass and lime leaf, prawn and mushroom.Cook prawn for about 10 minutes and remove the pan from heat. Add the rest ingredients. Leave to stand for about 5 minutes. Adjust seasoning. Add some fish sauce or lime juice and break up the chilies to release more heat as required. The soup should be spicy sour. Serve with bread or rice.
